TONJIRU (Pork Miso Soup)

Have you ever watched SHINYA SHOKUDO (Midnight Diner)? It's a Japanese Drama series. The story is about a small midnight diner in Tokyo and the stories of the customers.
I'm a big fan of that drama!

Last year, I was pregnant and have had bad morning sickness... I couldn't eat anything but cracker or orange juice.
It was a hard time for me. I lost my weight about 17lb for about 1 month.
I spent almost all the time in the bed. But, when I wasn't feeling so bad, I lay down on the sofa in living room and watched SHINYA SHOKUDO with my husband.

Shinya Shokudo has only one menu, TONJIRU! But If a customer willing to order something else, the master would cook as much as possible.



After I watched this Drama, I feel I would like to eat TONJIRU.
That  time, it was still early summer. TONJIRU is a winter soup though, my husband cooked it. And It was delicious!!!
So, This year, I cook TONJIRU many times already for my husband and my baby. Both of them loves TONJIRU. It's warm and nice Japanese comfort food.
I hope you like it too.


**Ingredients** 4 to 6 servings
1000ml (about 4 US cup)
1 tsp salad oil
150g (1/3 lb) sliced pork belly
1/2 gobo (burdock root)
1/2 carrot
2 inch daikon
2 satoimo (baby taro)
1 small sweet potato
1/2 leak
2 Shitake
1/3 block konnyaku (konjac)
1/2 block tofu
1 tsp grated ginger
2 tsp soy sauce
2 tsp MIRIN
4 and 1/2 tbsp MISO
2 tsp sesame oil


**Directions**
1. Cut pork into bite-sized pieces.
2. Peel the Daikon and Carrot. Cut into quarter rounds.
3. Remove dirt from the burdock, Make a lengthwise  cross shape incision. Cut it with a knife as if you were sharpening pencil. Soak it in water about 5 minutes. Then rinse and drain the burdock.



4. Tear the block of konnyaku with your hands.

5. Slice Shitake.
6. Peel Satoimo and sweet potato. Cut into bite-size.
7. Slice leek.
8. Heat the salad oil in a large pot,  and fry the pork.
9. When the pork is cooked, Add the all vegetables and konnyaku. Stir together.

10. Pour water into a large pot.
11. When it starts to a boil, skim off the scum.

12. Tear the block of tofu with your hands, And add them.
13. Simmer until the vegetables are tender.
14. Dissolve the miso into the stock. And, Add soy sauce, MIRIN , sesame oil and grated ginger.

Ready to eat!!

NIKUJAGA (Meat and Potato Stew)

NIKUJAGA is one of the popular comfortable food in Japan. 
Japanese Mom doesn't even follow the recipe, because they know how that taste like. And just cook NIKUJAGA without the recipe. So, that's the NIKUJAGA should be.
It means NIKUJAGA is very easy and simple. Once you know how to cook.
And, If you ask to Japanese men, 'What do you want your girlfriend to cook for you?' They will answer 'NIKUJAGA!' So,  He could know what the type of girl she is and she would be.
It is definitely a very popular family-favorite food!




**Ingredients** 4-6 servings
150g (5.3oz) Sliced Beef
4 potato
1/2 carrot
1 onion
8 green beans
150g SHIRATAKI noodles
2 tbsp salad oil
400ml (about 13 and 1/3oz) DASHI
5 tbsp soy sauce 
4 tbsp sugar 
3 tbsp MIRIN 


**Directions**
1. To prepare the SHIRATAKI, Rinse and drain well. And Boil for 3 minutes, drain and cut into easy to eat length. Set aside.

2. Cut Potato into 4-6 pieces and soak in a water. Cut carrots in rolling edges. Cut Onion into 1 cm slices. Cut Green beans into 5cm. And Cut Beef into about 5cm.

3. In a Large Pot, Stir-fry the beef with salad oil until no longer red. Add Potato, Carrot, Onion and Stir-fry until translucent at the potato edges.


4. Add the DASHI soup stock. Bring to a boil over low-medium heat. Skim off any foamy scum. Add Soy sauce, Sugar, MIRIN. Simmer for about 15 minutes until vegetables are tender.


5. Add SHIRATAKI and Green beans. Simmer for about 5 minutes.

6. Now, It's ready to be served!! 





Also, You can make NIKUJAGA with sliced Pork! I like Pork NIKUJAGA as well.
And Just let you know, NIKUJAGA tastes better the next day too!

Japanese White Bread 'SHOKUPAN' with Bread Machine

I make Japanese White Bread SHOKUPAN (食パン)  once in a week.

Just put all ingredients in the machine. And wait for a few hours. You can just read a book or do internet while baking. No fuss at all.
I'm sure when it start smell of baking bread make you very happy!!!




  **Ingredients** 15 slices
150g       whole milk (room temperature)
100g       water
400g       bread flour
30g         butter
3 tbsp     sugar
1 and 1/2 tsp    salt
1 and 1/2 tsp    dry yeast


  **Directions**
1. Place all ingredients in order suggested by your manufacturer.
2. Bake on White Bread setting. Cool on wire rack before slicing.

TERIYAKI Chicken Drumstick and Daikon Radish

I cook Chicken Drumstick often. It's one of the family's favorite recipes!!!
It tastes even better in the next day. We know it. But, It's too difficult to leave for the next day.

Here is the recipe!

  **Ingredients** 2servings
1/3 DAIKON radish (about 150g)
8 Chicken Drumstick (about 500g)
3 cup water
3 tbsp soy sauce
2 tbsp sugar
2 tbsp MIRIN (sweet SAKE)
1 inch piece of ginger roots


  **Directions**
1. Peel and cut DAIKON in round slices or if it's big,  Cut it in half moon. Put the DAIKON and add just enough water to cover it in a large pot. Bring it to the boil.

2. When Daikon cooked, Add Chicken lightly in boiling water, then Drain water.

3. Place 3 cups of water, soy sauce, sugar, MIRIN, Chicken, Daikon and sliced ginger in the pot. Bring it to the boil and reduce heat to medium low and let simmer for 20 to 30 minutes or until chicken is cooked and sauce has thickened.

4. Ready to eat!!! 

Wooo! Yum! I'm sure you want more rice!!!

ふぁふぁとろけるパンケーキ

今、とってもパンケーキが流行ってますね〜。
アメリカでいた頃、平日は忙しくてシリアルやベーグルなどで済ませていたけれど、日曜日はのんびりパンケーキを焼いて食べてたっけな。
どこかに食べに行ってもとても美味しかった。

時々アメリカの味が恋しくなっていてもたってもいられなくなるので、ネットでレシピを探して作ってみました!
どーん!8枚焼けたけど1枚食べて7枚に!

このレシピ、ふんわりしてて美味しいのー!
日本でもアメリカの本場のパンケーキをおうちで食べられるなんて!
レシピを私の好みな感じに少し変えて翻訳してみましたのでお試しあれ〜。
材料 8枚分

牛乳 180ml
お酢    大さじ2
中力粉  125g
砂糖   大さじ2
ベーキングパウダー  小さじ1
ベーキングソーダ  小さじ1/2
塩   小さじ 1/3
卵   1個
溶かしバター 10g
バニラエッセンス 2~3滴

作り方

1. 中ぐらいのボウルの中で牛乳とお酢を合わせ混ぜて5分程放置。

2.  中力粉、砂糖、ベーキングパウダー、ベーキングソーダと塩を別のボウルの中で混ぜ合わせる。

3. 卵と溶かしバターを1の牛乳液の中に入れて泡立て器で混ぜる。

4. 2の粉類を3の液の中に入れてダマがなくなるまで泡立て器で混ぜる。バニラエッセンスも加え混ぜる。

5. フライパンを中火にかけ、サラダ油を少量ひく。おたま一杯より少し少なめの量の生地をフライパンで焼いていく。ふつふつ穴が表面に出始めたら裏返して焼く。

出来上がり〜。
ふわっとしていてとろけるような食感!

因みに、オリジナルのレシピでは、生地に溶かしバターを約25g程入れているようです。あと、バニラエッセンスも入ってない。
私は生地にバターをそんなに入れなくても、充分美味しいと思うな。焼いてからバターをのっけてシロップをだら〜っとかけるのが好き!
はちみつでもキャラメルソースでもメイプルシロップでもたっぷりかけちゃって!
次はバナナを入れてバナナパンケーキにしちゃおうかな?それともブルーベリーパンケーキにしようかな?アレンジがきくのもパンケーキのいいとこよね!

オアフ島の名店Boots&Kimo'sのマカダミアナッツソースかかったバナナパンケーキはめっちゃうま。
LAのベニスビーチの側のお店で食べた。アメリカの朝食って感じ。

Ruby's Dinerのパンケーキ。ここの好き。
Da Washoku Kitchenなはずなのですが、なんだかDa American Kitchenになってるような気が…。ま、いっか〜!

HIYAYAKKO (Chilled Tofu)

There's nothing better than HIYAYAKKO during the summer in Japan.
It's been really humid and hot!!! So, I don't want to cook anything.
But Here is a HIYAYAKO.  It's Japanese traditional summer dish.




No bake. just a Tofu served with some toppings.

Oh, and Do't forget, Tofu have a lot of protein in it!!!

* Ingredients* 2 servinngs
1 block of Chilled Silken Tofu (or Firm Tofu)

(Toppings of your choice)
Myoga Ginger
Chopped Green Onion
WASABI
SHISO Leaf
grated Ginger
KATSUOBUSHI (bonito flakes)
Soy Sauce

*Directions*
1. Remove the tofu from the package and the liquid.
2. Cut a block into halves.
3. Place each Tofu in a small bowl.

4. Put on the toppings of your choice as desired.
for topping!

and Drizzle the soy sauce over the Tofu.

Eat immediately!


Enjoy the rest of summer with your HIYAYAKKO.

バナナブレッド

暫く更新が滞り失礼しました!
blogは更新できていなかったのですが、ここ最近色々とありました。
まず一つ目。
クックパッドさんでクッキーレシピのつくれぽが10件を超え、話題のレシピ入りしました!
さすがのクックパッド!目につくところに表示されたからか、レシピの一日の閲覧数が20000回を超えていました。すごい!
レシピはこちらです。

アメリカのおうちで作られているようなアメリカンタイプのクッキーです。ちょっといびつな感じがお気に入りですよー。

それから、二つ目。
最近お菓子に凝っていて、友達から送って欲しいと言われることが多くなってきたこともあり、菓子製造業の許可を取りたいなーという気持ちになってきました。
アメリカンなクッキーやカップケーキやブラウニーなど、うちのご近所ではなかなか見つからないので、ちょっと作って売ってみたいな。昔、使っていたけれど今はもう使われていない厨房施設もあるので、まずは食品衛生責任者の養成講座を受けに行ってきたいと思います。ラッピングなど材料もじわじわと揃えてみよう。
前々から言っている、お菓子教室も今年中にやってみたいぞ!

さてさて、それで、バナナブレッドを作りました。

レシピは山本麗子さんのこの本を参考にしました。



高校生の時から使っている「101の幸福なお菓子」という本。
この本を持ってるって方、結構多いんじゃないかと思います。
お菓子は甘くなくっちゃとばかりに、しっかりとした甘めのレシピが多く、そこも好みです。
このバナナブレッドなんて、何度作ったか分からないくらい!
アメリカのレシピと見比べてみても、砂糖は同じくらい、バターは2倍くらい入ってるようです。
だから、一切れ入魂型なのよね。何切れもは食べないけど(とか言って、私、朝ごはんに分厚い二切れ食べました!てへ。)、一切れ分がリッチでうんと美味しい。

ベーキングパウダー10gのところを、私はベーキングパウダー5g、ベーキングソーダ2.5gで作りました。


ものすごくしっとりしていて、とっても美味しい!
自分のバナナブレッドレシピも考案してみたいな〜と思います。
ナッツを入れてみようかな〜☆

OYAKODON(Chicken and Egg Rice bowl)  親子丼

OYAKODON is a Japanese traditional comfort food.
OYAKO means parents and child, refers to the main ingredients Chicken and Egg.
DON is Japanese style Rice Bowl.
Most kids loves egg and chicken, right? I can assure you,  your kids will love OYAKODON!
This is so easy, simple, quick, yummy and soothing, won't bother you.
You should try!

*Ingredients* 2 servings
(Dashi soup stock)
5 oz water
4 to 5 sliced dried SHIITAKE mushroom (only if you have.)
1 tbsp light-colored soy sauce
1 tbsp mirin
2 tsp sugar
1/3 tsp salt

5 and 1/4 oz Chicken thights
1/2 onion
2 egg
MITSUBA to taste (only if you have.)

2 cup steamed rice

*Directions*
1. Soak dried SHIITAKE mushroom in water.
SHIITAKE mushroom have UMAMI.

2. Add soy sauce, mirin, sugar and salt. 
easy OYAKODON dashi soup stock.


3. Cut chicken into bite-size pieces. Slice onion.

4. Put 2' in a pot or a skillet and bring to a boil on medium heat.
5. Put chicken and onion in a skillet and cover with a lid. Let simmer till cooked.

6. Beat eggs in a bowl, pour over the chicken and onion. Cook an additional 10 sec. Remove from heat and cover the skillet until egg is steamed.
using of the remaining heat 
7. Serve over cooked rice in a bowl.


Kids are going to love this!

ちびっこの好きな食べ物、私が子供の頃から大好きな食べ物って何かしらー?と考えてみたら、親子丼を思いだしました!
親子丼!なんかテンション上がる!
鶏肉のぷりぷりと卵の包容力、タマネギの甘みにごはんのがっつり感!
We love OYAKODON!!!
ふんわり甘いのがいいよね。好きよね。

私、思いだしました。高校の学食で親子丼を注文したら鶏肉が入ってなくて「おばちゃん、これ卵丼やないかい!」とキレかかったこと。育ち盛りでいつもお腹が減ってたもんねー。鶏肉が出て来るのが楽しみなのよ。
今日の私のランチ


材料も特別なものは必要ないし、難しいテクニックも必要なし。あっという間に出来ちゃうので作ってみて下さい!

*材料*2人前
スライス干し椎茸 4-5ヶ
水 150cc
薄口醤油 大さじ1
みりん 大さじ1
砂糖 小さじ2
塩 小さじ1/3
鶏もも肉 150g
タマネギ 1/2個
卵 2個
あれば三つ葉 3本くらい

炊きたてごはん2杯強

*作り方*
1. 水に干し椎茸を入れ戻しておく。
2. 醤油、みりん、砂糖、塩を加え、混ぜる。
3. 鶏もも肉を一口大に切る。タマネギをスライスする。三つ葉を3センチ程度に切る。
4. 小さめのお鍋かフライパンに2のだしを煮立て、鶏肉と玉ねぎを入れて火が通るまで煮る。
5. 煮立ったら、溶き卵を回しいれ、半熟の状態になったら火を止めて予熱で火を通す。三つ葉を散らす。
6. 炊きたてごはんにのせて出来上がり!

TONYU NABE (Soy milk Hot pot) 豆乳鍋 

Today, I would post Tonyu Nabe in compliance with my twitter friend's request.
In Japan, Almost it's spring season. and We usually eat Nabe(Hot Pot) in the winter.
Fortunately, Today was pretty cold as if return to winter again.
So I made Tonyu Nabe in 2 ways! One is Miso base soup. another is Soy sauce base soup. I like miso one.
Here is tips for cooking Tonyu nabe, Soy Milk curdles when heating it for too high too long too fast. Heat it up slowly, gently on low heat. OK?
Healthy!

Typical Nabe ingredients are Chinese cabbage, Long white leek, Tofu, Shiitake mushrooms, Carrot, MIZUNA, MOCHI, Chicken, Chicken meat balls, Thinly sliced pork, Shrimp, Oyster, Codfish, and so on.
you can use as many kinds of ingredients as you like!

     (Miso base soup) 1 serving
*Ingresients*
80cc water
70cc unsweetend soy milk
2 to 3 tsp Miso paste
2tsp Mirin or Sake
3 inch ×3inch KONBU(Dried Kept)

*Directions*
1. Mix water and soy milk  and Mirin(or Sake) together.
2. Add and dissolve miso.
3. Soak Konbu in.
4. Add some Nabe solid ingredients to the miso base soup.
5. Place the pot on low heat.


  (Soy sauce base soup) 1 serving
*Ingredients*
80cc water
70cc unsweetend soy milk
2 tsp USUKUCHI soy sauce
2 tsp Mirin or Sake
a pinch of salt
3 inch ×3inch KONBU(Dried Kept)


*Directions*
1. Mix water,soy milk, soy sauce and Mirin(or Sake) together.
2. Soak Konbu in.
3. Add some Nabe solid ingredients to the soy sauce base soup.
5. Place the pot on low heat.


You can dip into PONZU if you like! I like this way!
I'm hoping you'll like Tonyu Nabe. I think Nabe is very healthy!!


twitterのフォロワーさん(アメリカ人)から「豆乳鍋とラーメンの作り方を教えて欲しい。」というリクエストを頂きました。
ラーメン好きのアメリカ人は何度も見たことがあるので、そっちは驚かないけれど、豆乳鍋なんてよく知ってるなーと驚きました。
やっぱヘルシーだからかな?豆腐も人気あるものね。それに、鍋は簡単でヘルシーで美味しいもんね。

もう春だしお鍋もなぁと思っているところへ、今日のこの寒さ。
山の方では雪も降ったみたい。
そんな訳で作ってみました。


味噌味、しょゆ味、の2通りのなべだしをご紹介したいと思います。具材はもうあるもの何でもいいんじゃないか。

どうしても豆乳は塩分と反応して、もろもろしてしまうけれど、弱火でじわじわ火を通し、エンリッチ塩を使うとだいぶ違うようです。

具沢山ー。


具材は、白菜、椎茸、水菜、ニラ、人参、白ネギ、鶏肉、豚肉、肉団子、餅、タラ、白子、ホタテ、エビ、牡蠣、豆腐、うどん、マロニー、などをお好みで。

(味噌ベースの豆乳鍋のだし)1人前
*材料*
水 80cc
無調整豆乳 70cc 
あわせ味噌 小さじ2〜3
みりんか酒 小さじ2
昆布 8cm×8cmくらい

*作り方*
水と豆乳をあわせ、そこに味噌を溶かし、昆布を放り込んでおく。
そこに具材を入れ、弱火でじんわり火を通す。

(しょうゆベースの豆乳鍋のだし)1人前
*材料*
水80cc
無調製豆乳 70cc
薄口醤油 小さじ2
みりんか酒 小さじ2
塩ひとつまみ
昆布8cm×8cm

作り方は味噌と同じです。

豆乳鍋はマイルドな味なので、途中、変化が欲しい時は、しゃぶしゃぶのゴマだれや、ポン酢につけて食べても美味しいですよー。
